Who else loves Trader Joe's as much as I do? They always have seasonal yummies. When I came across their Gluten Free Pumpkin Pancake mix I thought I might be on to something. I'm not a big breakfast person but I knew I could use the mix to create another delicious treat. Muffins were the first thing to come to mind. Then when I turned the corner and found Pumpkin Butter (which has NO butter), I knew I found a match made in HEAVEN!
So, here is what you will need...
*Unsweetened Organic Applesauce
*1 egg
*Trader Joe's Gluten Free Pumpkin Pancake Mix (or any brand of pumpkin pancake or cake mix!)
*Trader Joe's Pumpkin Butter
*Water
*Trader Joe's Coconut Oil Cooking Spray
*Muffin Liners
NOTE: I ALWAYS substitute applesauce for oil or butter in recipes. It instantly makes them healthier and super moist!
Directions:
*Pre-heat oven to 350 degrees
*Spray muffin liners or muffin tin with Trader Joe's Coconut Oil Cooking Spray
*Follow directions on the pancake mix or cake mix box EXCEPT substitute any butter/oil for applesauce (use the SAME amount it says for the recipe -- super easy!)
*Fill muffin cups with 1-2 TBSP of mix, put 1 spoonful of pumpkin butter in the center, then add 1 more TBSP of pancake mix on top of that
*Bake for 15-20 minutes or until done
